WINIFIKACJA	Very traditional with long fermentation at high temperatures, and in oak vats which are perfectly maintained. The wines see at least 50% new oak during the ageing, which lasts 18-20 months, and are bottled 18 months after the harvest.

STYLE	At best, Canon can be an exemplary "plateau" St-Emilion : powerful, tannic, concentrated, extraordinarily rich and profound. Canon can age marvellously.

NOTY RYNKOWE	If Canon had some technically difficulties throughout the 1990’s resulting in the gradual loss of confidence from some in the trade, the estate seems to be slowly getting back on track.
