WINIFIKACJA	The vinification and the elevage is conducted by homogeneous lots and according the grape variety, soil and age of the vines (the wine coming from Merlot grapes on the limestone plateau and the wine coming from young cabernet vines from the sandy slopes will be vinified and aged separately and differently). The association of different elements as variable as the size of the casks (225 litters to 600 litters), their age (new or one or two years old), their origin (Allier, Limousin, Orléans forest...), their essence (oak, acacia...), the time in barrels, the different co-operages, enables Soutard to seek and find the best balance between the wine's structure and the influence of the wood (this of course for each individual lot). The creation (in 1973) of their second wine (Clos de la Tonnelle) enables them to maintain the best possible assemblage for the Grand Vin.

A delightful and dynamic man with innumerable and creative insights and ideas including on wine-making. “L’Envers du Décor” (a rough translation could be “Behind the Scenes”), located in the heart of the village of Saint Emilion, is his very good and convivial restaurant.
